Imho the reason floor drains are not often used in residential kitchens is that unless the floor is adequately sloped to the drain it can be more difficult to get water into it than to put it into a bucket by wringing out a mop and few people want their kitchen floor to be sloped or pay for the cost of it.
Most floor drains however will be connected to pipes carrying wastewater and sewage away from the house.
When this is the case the drain will have a trap somewhere nearby along the line.
The purpose of this drain trap is to hold standing water which seals the drain system and prevents sewer gases from.
In sinks showers and tubs the trap is just underneath but floor drains may flow horizontally some distance before meeting the gas trap.
